Crayfish Canapes



120g peeled crayfish tails (Waitrose usually have these)
1-2 tbsp mayonnaise 
1 lemon - juiced
5p piece of dried chilli flakes
1 tbsp of dill - finely chopped
100g circular crispbreads - I use Peter's Yard Artisan Swedish Original Crispbread
salt and pepper

serves 2-4

Mix together all ingredients. Adjust the mayonnaise and lemon juice to taste. Spoon the mixture onto the crackers about 10-15 minutes before serving. The mixture will soften the crispbreads but don't prepare them too far in advanced or they will go too soggy! Serve with champagne.
